I just finished Dr. Palmer's podcast on getting into a ketonic state with a starvation diet of water only starting today.
It may sound that way if you only read the summary but, it's not.That sounds suspiciously like a version of the Atkins diet - whos creator dies of heart problems and obesity!

Chicken Soup

1 (2 1/2 to 3-pound) fryer chicken, cut up
3 1/2 quarts water
1 1/2 to 2 teaspoons Italian seasoning
1 teaspoon lemon zest or peel
1 full garlic bulb cut in half
1 teaspoon whole peppercorns
1 onion, roughly chopped
1 celery stalk, roughly chopped
1 carrot, roughly chopped
2-3 sprigs fresh thyme & Rosemary
the rind from a hard cheese like parmesan or pecorino romano
4 bay leaves
3 chicken bouillon cubes
Kosher salt and freshly ground black pepper
- Soup:
2 cups sliced carrots
2 cups sliced celery, with leafy green tops
2 1/2 cups uncooked egg noodles
1 cup sliced mushrooms
3 tablespoons chopped fresh parsley leaves
1/3 cup cooking sherry
2 teaspoons chopped fresh rosemary leaves
1 cup grated Parmesan, optional
3/4 cup heavy cream, optional
Seasoning salt
Freshly ground black pepper
For the stock: add all ingredients upperstar imago menu to a 5-7 quart soup pot. Fill pot with cold water. I leave the chicken whole. Cook until chicken is tender, about 35 to 45 minutes. Remove chicken from pot and set aside to cool. Pass the stock through a strainer and discard the solids. You should have approximately 3 quarts of stock. I usually end up with 2.5 quarts and I add a little water. When chicken is cool enough to touch, pick bones clean, discarding bones, skin, and cartilage. Set chicken aside.
For the soup: bring stock back to a boil, add carrots, and cook for 3 minutes. Add celery and continue to cook for 5 to 10 minutes. Add egg noodles and cook according to directions on package. When noodles are done, add chicken, mushrooms, parsley, sherry and rosemary. Add Parmesan and cream. Cook for another 2 minutes. Adjust seasoning, if needed, by adding seasoning salt and pepper. Enjoy along with a nice hot crusty loaf of French bread.

Fasting before Easter was just a way to make people to feel close to god instead of fearing that their winter rations were running out.I think it is just an ancient practice in religions like fasting before Easter or during Ramadan.
Fasting triggers the body metabolism to use excess fat and check/correct immunity levels in ye old internal pharmaceutical factory.

Eye Round Roast
At about $8lb. its inexpensive and pretty simple to prep and even easier to cook.
All you really need is salt and coarse ground pepper or you can add additional spices and some mashed garlic like i did here.
First, you'll need to tie up the roast to give the meat an even shape.
Next, coat the roast with a tablespoon of oil.
Mix together 2 teaspoons of salt and 1 teaspoon pepper. Coat the roast all over and seal with plastic wrap. Refrigerate overnight.
Unwrap roast and place in a roasting pan on top of rack or a few cut up carrots. Let it sit for 2 hours at room temp.
Set oven temp at 475F Insert probe into roast and bake, uncovered 25 minutes.
Reduce temp to 325F and continue cooking till probe reads 125F. Remove, tent with tin foil and allow temp to rise to 135F
Carve and enjoy with your favorite side dish.
