Connecting one end to the wiper eliminates the problem of an intermittent pot going open which can be a problem in some applications, such as motion control or volume control on the nursery PA system. Connecting the wiper to an end means that the pot resistance will not go any higher than the pot's maximum resistance vs. an open. Which end you connect to the wiper will determine whether the resistance increases or decreases with clockwise rotation. That's usually of no importance unless you want your circuit to be "user friendly". We like things to get brighter, lighter, louder, higher, etc. with clockwise rotation (unless you're a "lefty" and then all bets are off).
What i did was run 2 jumpers to another part of a proto board, and made them closer together, so i could just simply use the middle, and the left side/right side
