whats the advantage to this over using a SPDT switch? just that you get debouncing in both switches?

i'm saying, i understand the uses of astable, i get monostable, but what would you ever use bistable mode for?
 
The 555 can be used in the Bistable mode if you need a set/reset bistable. But I would not bother, I would use either a S/R circuit composed of gates (NAND or NOR) or a Flip Flop such as the 4027.
