I was thinking of replacing two single op-amps with one dual. Two different gains are required, but not at the same time. Has anyone done this and experienced any problems?

Assuming that you want similar supply voltages for the opamps, then yes, a dual package chip will work and, no, I've never experienced a problem with that arrangement.
