I've got two Raspberry Pi 3 Model B's running Gentoo Linux. The application I'm developing on them only requires ssh access so I didn't need a graphic shell (although you can install a desktop environment on Gentoo, it doesn't come with it by default) and I can customize the kernel so it was the perfect distro for what I'm doing with it.
