how do you call a female connector that connects to ordinary snap-off pin header?
0.1" socket

the one wire crimps to.
If you mean the ones that connect to e.g. ribbon cable, it's called IDC (insulation-displacement-connector). If you mean the ones that use crimps that you have to apply to each wire, they're called 'crimp'
