Have you checked out the Microchip weigh scale board using a MCP3421, it also has board files and firmware example.
You can scale the MCP and also it has I2c communication with the pic.

Force is relative to weight, so if you work out a small "map" you can display it how you want!!

I read weight!! 1 tonne will represent a digital input and 10 tonne will represent another... A map will scale the input to a scale you want to show!!
