Hi All:
I was looking at this sensor:

I note that the output range is around -1mV to 6mV for 0 to 100C.

My range of interest is around 20C to 50C.

But what would be a reasonable approach to get 1 Deg C resolution from this critter? It seems very error prone given the output V.

You could use an op amp powered from a dual supply to cope with the +- o/p, then you can remove the offset once amplified by using a differential amp to get the range you want.
0 to 5v should be possible over the range you want, but you'd have to mess with offset and gain trimmers, and noise might be an issue too.
