They used different network protocols for wired and wireless because the radio in less reliable and physical different.

I expect you could start with a wireless network and use MAX485 chips in place of the radio units. With a some tweaking it could work.

Zigbee is a mesh network and much more complicated then CAN

Sorry i dont understand this. MAX485 is used for Wired data communication aswell isn't it?
