i have a question here on why are we still using ASK technique to convert digital signal to analog signal and why are remote control use ASK?

In what context?.

Obvious answers are that you need to convert digital to analogue to send the signal down a telephone line, because a telephone system is an analogue system.

As for 'remore control', remote control doesn't generally use ASK, unless you mean some thing else?.
