There's no reason whatsoever to use them in any of those applications, so 'idiot' seems appropriate for someone who orders a more expensive lower spec item
The 741, the 555 and now the 16F84 were cutting edge when they were first made.
I think that one of the reasons that they are still used is that students of electronics are taught about op amps, timers and microcontrollers using those as the examples.
It's not obvious to students that the latest equipment doesn't use stuff like that, so they just use what they know when it comes to designing stuff for real.
