eg: what are your required power supplies, single/dual etc

The weigh scale transducers, excitation voltage, sensitivity , weight range etc...

I glued conductive foam, the kind that protects integrated circuit chips, between two copper clad boards. Measure the resistance between the two boards with known weights to calibrate. The resistance of the foam goes down when pressure is applied. Not the most accurate but very cheap.
