Parameters for television transmission from satellite ?

Hi. Am new to FTA (free-to-air) satellite reception; and would like to know these parameters :
In the line Fre/Pol/Rate; I know are frequency (3775MHz), polarization (vertical) but what is rate ?
In the line V/A/PCR PID; I know they are Video, Audio, - What is PCR ? PID may be Packet identifier ?

On the second attachment, what is symbol rate ?
