Can a 5A Switched Supply Peak at Much Higher Currents?

The quick answer is no.
However, if there is a large capacitor on the output of the regulator, it may be able to handle large transient loads.
But, the devil is in the detail.

From the data sheet:

You exceed that value at the peril of zapping the device.
And note that the switch current can be larger than the output current, if it's in a boost configuration.
