Using am modules like these is it possible to amplify a microphone signal and use one of these to transmit voice etc ?

Only if you convert the Audio to digital, The modules are data only. Sorry Andy

Maybe you can try VMR6512, it is a highly integrated FM audio signal transmitter module.
