Does anyone know the gauge of wire used in ear buds (the ear pieces used to listen to ipods)?
Is the wire always copper?

It depends

Some headphones I've seen use single core enamelled wire, some use multi-stranded wire.

All headphones use copper wire.
 
Very flexible low power wire has thin bands of copper mixed with cotton strands for strength. The cotton must be cut away or burned away before soldering.
