Sonoff connectivity issue ... again

Same issue, another day. It's that time of the year when I drop here to rant how I love electronics but can't accomplish jack.

Long story short, paired my sonoff device (single channel relay, RE5V1C) to my wife-eye (or WiFi, same thing) and it is appearing in the devices list on the ewelink app. But it always shows as offline so I can't turn it on or utilize it in any way.

Note that the device led blinks once per second (code B, I think, meaning no WiFi, despite the fact that the wifi is turned on and I'm posting this message over that same WiFi).

What do I do? I feel like pulling my hair out

I think it did not get set up right. There is a way to factory reset the RE5V1C and start over.
-delete from ewelink and reinter it.
-move the module close to a router and see if it is just a weak signal.
-Maybe wrong password or IP address is wrong.

No I think I know the issue but don't know how to fix it.

When setting it up, the app tells me to put the device in "quick pairing mode" (fast blinking with equal intervals) which sets the device as a wifi hotspot named ITEAD1000blahblah. Then I'm told to connect to this hotspot and click NEXT.

It takes over from there and adds it to my devices list. Nowhere in the whole process am I asked for which wifi router do I want my device to connect to ‍♂️

Perhaps that is why when I turn on the device after adding it, it never finds a wifi router (because none was given to it during pairing)?
