PL-2506 or GL811E used for DAQ?

I have several external hard drive enclosures that use PL-2506, and have a couple using GL811E for a USB to IDE bridge. Is it possible to use these chips to act as a simple I/O port, digital and analog? Looking at the datasheet from Prolific, the 2506 has several open I/O pins. If it is possible, how do I go about accomplishing this?
