anyone got an idea of what I should know if i wanna design and build a simple video game system like Attari 2600 or NES

Some ppl have successfully made games with a pic or sx. But its a single game in a single chip (you can't swap games like in a NES).

If you want it to run more complex games, and perhaps even swap games (with a cartridge or something). You should go look information about suitable CPU's in stead of microcontrollers.
