I'm using a thermocouple in my project .. I searched for the cold junction IC named LT1025 but it is not available in my country... do any one have a circuit that can make cold junction compensation without a need to this IC

How about the AD595 or AD597 from analog devices? Or the MAX6675 from Maxim/Dallas Semiconductor?

Look for application note AN28 from Linear Technology. Could be of help.

Somewhat outdated but principles stand.
