Most all GPS units have an NMEA-0183 output. This is easy to read with a PIC serial port. The PIC can be set up to use very little power. Then you need a place to store log data. Some PICs have up to 64k of space which can be programmed with data in normal operation. External EEPROM can also be used. Also some flash card formats use a SPI interface.

The PIC can be set up to dump the data back out through the serial port, which it can be read into a computer.
