Sounds fun! Might be more productive to google for this type of info. Unless there is a kit out there I don't think you're going to just get handed all the circuits, source code etc.

My thought is break the problem down into pieces. First, get the hand/arm working with a joystick (or wiimote?) then get a glove and figure out how to decode its signals and display them... then instead of displaying, have it control the arm directly.

For the arm, if you can start simple, like one finger of a hand or a few degrees of freedom (DOF) then build up from there. Easier to get 1 finger working right and duplicate it 4 more times than trying to do it all at once...
