I understand a single-ended analog to digital converter, but could someone explain how a double-ended A/D converter works and how to hook up the signals? Does this get me more resolution?
Thanks,
Dale

It doesn't matter which way you hook up the signals because you are measuring the differential voltage between the two signals. The resolution is the number of bits in the converter. You don't get more bits by going differential.
