The sensor outputs a DC voltage to the ECM, so you could work with voltages and not resistances, like maybe use a zener diode to set the limit where it stops changing.
 
How are zener diodes rated?
They act like a diode but also a voltage limiter?

If you connect a zener in reverse it acts in a way that will limit voltage.

You could measure the DC voltage your sensor outputs on that wire to the ECM, in normal running, then again with your resistor connected. Once you know how you want to change the voltage to the ECM to change the performance you will be able to see what is needed to change that voltage and still have it limited at a specific limit.
