Hey guys,
Just wondering, is it possible to take a simple calculator, and say hook it up to a temperature probe(ohms) and have the calculator display a temp on its own screen?

Not without using a whole bunch of electronics between the probe and the calculator IC. The IC in a simple calculator responds to digital inputs only.

Easier, but still a long way from getting the sort of input the IC expects. You would have to convert your digital input signal to simulate an appropriate sequence of key presses on a keypad matrix. It would be a lot simpler/cheaper just to use a micro with A/D conversion built in to condition the probe signal and drive a conventional LCD display module.
