ad590 and LM335

Hi everyone,
Im quite new to electronics and I'm having trouble understanding how these two sensors work.

I know that AD590 produces current proportional to temperature so that higher the temp. greater the current. Therefore, at 25 degrees celcius(298K) Vout at resistor of 10k is about 3v. How does it work with a thermocouple. The book says that it acts as a cold junction compensation. With the SECOND diagram, the sensor is brought very close to the cold junction. Now lets say that temp. at cold junction is increasing. This will produce a current proprtional to the temperature. But how does it work to nullify the temperature gain?

Similarly with the LM335. It generates 10mV/K but how exactly does it act as a compenstator. Below is a couple of diagrams
