I found myself with more spinach than I could consume so I made these. They were fabulous.
Spinach Pesto:
2 1/2 cups fresh baby spinach
3 garlic cloves
1 tablespoon olive oil
2 ounces feta cheese, crumbled
Meatballs:
1 pound lean ground chicken
2 ounces feta cheese, crumbled,
1 large egg...
