Hey everyone. I'm looking for a good electronics magazine, sort of like popular mechanics (although a bit more scientific / mathematical would be nice, ie. explaining how stuff works and not just what it is) but focusing on electronics. I came across "Nuts and Volts" by accident, is it worth a subscription? Any other magazines out there?

That publication is geared more towards microcontroller projects. It's a good rag, but you won't learn alot about electronics. Unfortunately, good electronics pubs have pretty much died off.
