Default PCB traces

Is there a general rule of thumb about the width of a trace? I would imagine that it would need to be "X" amount wide to carry "Y" amount of amperage...just for my information

Yes, it also depends on the thickness of the board and how much voltage drop and temperature rise you can stand.
