Can anyone show me a schematic for changing the level that a dynamic microphone records at? Ideally you could plug a mic into it with a phono plug and the other end would plug into a tape recorder.

Do you wan't to increase the recording level or decrease it?

Decreasing can be easily done using a resistor as attenuator.

To increase the level, use buffer amplifier making use of op-amp. The gain of the op-amp will decide the recording level.
