I wanted to know about single chip CCD that has digital output and easily interfaceable to a computer. I also wanted the interfacing details and information about any grayscale CCDs.

Most CCDs have some analog components off of them to perform the amplification and gain/offset adjustment. You might consider a CMOS sensor because those are similar (imaging quality is not as good), but they are basically single chip solutions. OmniVision make some, as do others.
